When It’s So Hot All You Want to Eat is Water.

Tomato Cucumber Salad with Fresh Mint and Parsley

News flash: The weather in LA is super different from the weather in San Francisco. I moved down south last week, and in case anyone in the Bay Area was wondering, Los Angeles has your sunshine and they’re keeping it for good. As my body recalibrates to the jump in thermostat, I’m craving food with a ton of water in it. The juicier and colder the better.

Enter this super easy, fast, and delicious summer salad: crisp cucumbers, sweet tomatoes, fresh mint, and refreshing lemon. I also include a super helpful tip for taking the bite out of raw onion (which I typically despise).
